KASH’s Italian Bean Soup

TOTAL TIME ESTIMATION = 30-40 minutes

Ingredients

  • 40g Yellow Onion
  • 1 Tbsp Heaping Minced Garlic
  • 10g Shredded Carrots
  • 30G Orange Bell Pepper (or any Bell Pepper)
  • 1 Can Northern Great Beans
  • ¾ Cup Chicken Broth
  • 2 Tbsp Olive Oil
  • 2-3 Dashes each of Garlic Salt, Pepper, Basil
  • 1 Bay Leave
  • smallest pinch of Taragon

Preparation

  1. Put Olive Oil, Minced Garlic, Shredded Carrots, Chopped Onion,
    Chopped Bell pepper in pan on medium heat
  2. Stir periodically for about 5 total minutes
  3. Add ¾ cup Chicken Broth for about 3 minutes,
  4. Set Heat to LOW
  5. Add 1 Can of Great Northern Beans for about 10 minutes

Serve

If you like it chunky eat as is
or puree in blender (easier for kids to enjoy and not be picky about chunks)

Very nice with a toasted sour dough bread, bread sticks, crackers
